Congratulations to Maggie Carroll and Liza Khorozova who are now National Culinary Champions having won the National Secondary Schools Culinary Challenge 2018, held recently at the Manukau Institute of Technology.
Our team competed against 8 regional winning teams come away with gold medals. They had to prepare, cook and present, four individually plated portions of an entrée and four portions of the main course within 90 minutes.
The entrée had to contain fresh New Zealand grown tomato as the principal component of the dish. The main course portions had to include at least three fresh New Zealand grown vegetables, one of which must be a potato. The protein component was produced from a waitoa chicken breast.
Tomato tart with fresh tomato and basil salad, manuka smoked tomato foam with goats cheese accompanied by a rich tomato sauce.
Chicken breast filled with broad bean farce on truffle potato puree with petite crumbed sausage, seasonal vegetables served with jus and tarragon cream sauce.
